This year for Mikes Birthday he requested a UFC cake. I got a little ambitious and I even made the cage. It was made from royal icing. It turned out great!
I had never made royal icing before so I was quite nervous that the fence would not turn out.
- 3 tablespoons Meringue Powder
- 4 cups (about 1 lb.) confectioners’ sugar
- 6 tablespoons warm water
Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer).
I made a few extra, and I am glad I did because a few broke in the process. After they were piped I let them sit over night and put them on the cake just before serving.
