Apple Cake!

If you like apple things you will love this Adams County Apple Cake.  The recipe is from a book that I turn to quite often,  Taste of Home’s Complete guide to Baking.   Mike absolutely loves this cake and asks for it quite often.  It is so easy to make so I don’t mind making it at all.

Adams County Apple Cake

3 cups all-purpose flour
3 tsp baking powder
2 cups, plus 5 Tbsp sugar, divided
1 cup vegetable oil
4 eggs
1/3 cup orange juice (I used a freshly squeezed orange)
1/2 tsp salt
2-1/2 tsp vanilla extract
4 medium apples, peeled and thinly sliced (I use granny smith)
3 tsp cinnamon

In a large mixing bowl, combine the flour, baking powder, 2 cups sugar, oil, eggs, orange juice, salt and vanilla.  Beat until thoroughly combined.  Batter will be thick.

In another bowl toss apples with cinnamon and remaining sugar

Spread a third of the batter into a grease and floured 10 inch  tube pan.

Cover with apples and repeat layers.

Spoon remaining sugar  over the top.  (I added some more cinnamon to the sugar).

Bake at 350 degrees for 1-1/2 hours or until a tooth pick inserted near the centre comes out clean.  Cool for 20 minutes before removing the pan to a wire rack to cool completely.
